🍷 Curious About Kakheti? Discover More Here:

Qvevri – Wine Made Underground
Qvevri are large clay vessels buried underground, used for fermenting and aging wine in Georgia for over 8,000 years, predating the Egyptian pyramids. This method, recognized by UNESCO as an Intangible Cultural Heritage, allows the wine to “breathe” through contact with the earth while maintaining stable temperatures. It’s still widely practiced in Kakheti by both families and commercial wineries.

The Soviet-Era Wine Cave
The wine tunnel you’ll visit in Kvareli was originally built as a secret Soviet shelter. Today, it holds tens of thousands of wine bottles. The cool, dark, and stable conditions are ideal for aging wine, and such tunnels are a notable feature of Kakheti’s wine tourism.

Chacha — The Fire Beneath the Wine
While wine is about patience, chacha is about spirit. This homemade brandy, sometimes over 60% alcohol, is often shared in reused plastic bottles with no label. Georgians say “Just a little – it heals everything.”

Vineyard Smoke
In Kakheti, mtsvadi (grilled meat) is often cooked over grapevine branches instead of coal. Locals believe it gives the meat a sweet, smoky depth that can’t be faked. It’s always eaten with hands — never forks — especially during harvest celebrations.

Churchkhela isn’t candy — it’s travel food for warriors.
The string of nuts dipped in grape juice was invented to feed fighters and shepherds during long journeys. In ancient times, Georgians packed churchkhela for battle because of its durability and high energy content.
